I'm in the middle of wrapping up the product shoot for Albidaya Souq and sharing a gorgeous bowl of baklava with the team while we work - these little honey-soaked sweets are divine! I had a family friend in Dubai, where I grew up, who was constantly traveling, and I knew my tito was back in town whenever I'd come home to a big bilao of assorted types of baklava from Syria or Turkey.
I've had some pretty delicious memories of growing up in the United Arab Emirates, and it was those flavors I sought out when I came to the Philippines. Thick Arabian honey, strong mint teas, giant Medjool dates, and good quality Turkish coffee are hard things to come by in Metro Manila, which is why I decided to put up Albidaya Souq for those of us who miss that taste of the Middle East, but don't want to spend an arm and a leg for it.
Albidaya means 'the beginning' in Arabic, and all I want is for this humble souq to be the beginning of your journey to enjoying organic ingredients sourced from all over the Middle East. Whether you grew up there and miss the food (like me!), worked abroad and want to recreate dishes to share with your family here, or are simply looking for a healthier alternative to snacking, we have a little something for everybody.
