2. Key Lime Coconut Energy Bites
My go-to pick-me-up after taking the dogs out for a walk, Ashley of Spoonful of Flavor made me realize energy balls needn't be all cacao and chia seeds! I substitute the key limes for a mix of both Philippine limes and calamansi, for a sweet kind of sour. Almonds, dates, cashews, lime, and coconut come together for an explosion of tropical flavor. This coco-nutty recipe from Perry of Life by Daily Burn is a keeper. Rolled in chocolate (preferably dark) and shredded coconut, these little truffles are delightful as either a healthy snack or a disguised dessert.
